Gong Bao Tofu

Chinese Style Gong Bao Tofu

A vegan version of the famous Chinese dish - Gong Bao Chicken.

You are vegan and always wanted to try or miss the flavour of the Gong Bao Chicken? Then this version of the Chinese classic dish is perfect for you. Without meat, but with all the original flavors. The typical sweet and sour taste, the juiciness of the vegetables and the crispiness of the peanuts. You will definitely want to repeat it.

Ingredients

  1. Tofu:

    200gr tofu, in cubes

    1 tbsp white wine

    1 tbsp soy sauce

    2 tsp baking soda

    1 tsp cornstarch

  2. Sauce:

    1/2 cup vegetable broth

    5 tbsp soy sauce

    2 tbsp balsamic vinegar

    2 tbsp white wine

    2 tbsp white sugar

    1 tsp cornstarch

  3. Stir Fry:

    2 tbsp vegetable oil

    2 garlic cloves, minced

    1/2 onion, diced

    1 tsp ginger

    1/2 red bell pepper, diced

    1/2 green bell pepper, diced

    1 chili pepper, diced

    4 green onions, diced

    1/2 cup roasted peanuts


Preparation:

  1. In a bowl, combine all ingredients for the tofu and let it marinate for 10 minutes.

  2. Whisk sauce ingredients together until sugar dissolves and set aside.

  3. Heat a large wok over high heat. Add 2 tablespoons of cooking oil, then add the tofu. Cook for about 5 minutes. Remove from heat and set aside.

  4. Add remaining oil into the same wok. Stir in garlic, ginger, peppers and stir fry for 1 minute.

  5. Pour the sauce mix into the wok and bring it to a boil while stirring.

  6. Once it begins to thicken slightly, add again the tofu into the wok and mix all of the ingredients through the sauce until the tofu is evenly coated.

  7. Stir in green onions and peanuts. Toss well and continue to cook for a further 2 minutes.

  8. Serve immediately with some rice.
