Blueberry Swirl Cheesecake

Homemade creamy blueberry swirl cheesecake bars.

A great combination of crunchiness from the cookies, sweetness from the cheesecake filling and sourness from the blueberries, this is a perfect option for your breakfast, snack or dessert. This cheesecake is a delight to your eyes and to your month, once you have a bite it will become one of your favorites desserts.

Ingredients

  1. Blueberry Filling:

    1 cup blueberries

    1/4 cup sugar

    1 tbsp lemon juice

  2. Base:

    100gr oat cookies crumbs

    1/3 cup unsalted melted butter

  3. Cheesecake:

    250gr cream cheese

    250gr sour cream

    1/2 cup sugar

    1/4 cup flour

    1 tsp vanilla extract

    3 eggs


Preparation:

  1. In a pan add the blueberries and the sugar and let it simmer for about 5 minutes, on medium heat. Then, with a spatula mash the berries until you get a thick sauce and let it cool.

  2. For the base, pour the cookies and the melted butter into a food processor and mix well.

  3. Pour the cookie mixture into a buttered pan with parchment paper and place it in the fridge.

  4. In a bowl, with a mixer, whisk the cream cheese. Then add the sour cream, sugar, flour, vanilla and mix it well.

  5. In another bowl whisk the eggs and then pour it in the cream cheese mixture. Mix everything together.

  6. Pour the mixture over the cookies base and spread with a spatula.

  7. Spoon the blueberry jam on top and make swirls as you like.

  8. In a preheated oven at 150º C, bake the cheesecake for about 40-50 minutes.

  9. Remove the cheesecake from the oven and let it cool.

  10. Let it chill for at least 4 hours in the fridge and then it’s ready to enjoy.
