Chicken Pesto Pasta

A combination of fresh vegetables, chicken, pasta covered with pesto sauce and cheese. What can go wrong? And on top a little bit of basil, which gives an amazing smell to this dish. Hearty, filling and cozy. A perfect choice for a warm comfort dinner, to enjoy with your family. You can even freeze it and enjoy later.

Ingredients

  1. Ingredients:

    400gr pasta of your choice

    300gr chicken breast

    1/2 onion

    2 cups spinach

    2 cups chopped tomato cherries

    1 cup pesto

    1 cup cream cheese

    1/2 cup mozzarella

    basil leaves

    salt

    pepper

    olive oil


Preparation:

  1. In a pot of boiling water, cook the pasta al dente. Reserve 1 cup of the pasta cooking liquid, then drain the rest.

  2. In a large frying pan, heat the olive oil. Then add the onions, the chicken and let the chicken cook. Add salt, pepper and spinach and let it sauté for about 5 minutes.

  3. On the side, in a small bowl, mix the cream cheese and the pesto until it’s well combined.

  4. Add the chicken and the pesto mixture to the pasta and mix. Then add the remaining water from the pasta and mix again.

  5. Preheat the oven at 180º C.

  6. Pour the pasta into an baking pan, add the cherry tomatoes and the mozzarella cheese on top.

  7. Bake for about 30 minutes, or until the cheese is melted and with a nice golden color.

  8. Serve with some fresh basil.
