Easy Italian Tiramisu
A very simple version to the classic Italian dessert - Tiramisu
A creamy and soft dessert, perfect for any occasion.
Having a dinner with someone special and wanted to impress with a sophisticated dessert? Or just craving something special on a Sunday afternoon? This dessert is perfect for any occasion. Very easy to make, creamy and softly sweet, with a slight touch of coffee taste. It will melt in your mouth. You can make a single portion (like in the photos), or prepare a recipient for about 6-8 portions.

Fridge Time: at least 4 hours (24h ideal)

Ingredients
Cream:
4 egg yolks
1/2 cup granulated sugar
200ml cream
250gr mascarpone (for a lighter version, I use Philadelphia Light)
Assembly:
1 cup strong coffee
2 tbsp rum/cognac
200gr ladyfingers biscuits
1 tbsp cocoa powder
1 tsp cocoa nibs
Preparation:
In a bowl, with an electric mixer, whip together the egg yolks and the sugar, until you get a very pale yellow mixture.
In another bowl, whip the cream, until it creates soft-medium peaks. Then add the mascarpone (or Philadelphia), and continue to whip until you get a creamy and soft mixture.
Gently, pour the egg yolks into the cream.
On the side, prepare the coffee and combine it with the rum/cognac, and set aside.
Working quickly, dip each ladyfinger into the coffee mixture, then place them into a recipient, until you get an even layer.
Spread half the mascarpone mixture onto the ladyfingers in one even layer. Then repeat the same process for the next layer.
Dust the top layer with the cocoa powder and the cocoa nibs.
Let it chill in the refrigerator for at least 4 hours (24 hours would be perfect).
