Cauliflower Egg & Shrimp Fried Rice
Cauliflower egg fried rice with spicy shrimps and green onions
A bowl of fried rice that never felt so light on your stomach.
Are you one of those people who simply can’t go without a bowl of rice, but every time eats it gets super full? Or are you trying to cut on carbs? I would suggest you to try this version of egg fried rice. So similar in taste and texture to the regular rice, but so much lighter on your stomach. You can combine it with different ingredients, veggies, shrimps, chicken, etc. Give it a try!

Servings: 2-3 servings
Ingredients
Rice:
1 medium cauliflower, chopped
1 medium carrot, in cubes
1 small onion, minced
1 cup green peas, frozen
2 eggs (you can use scrambled tofu for a vegan version)
1 tbsp soy sauce
salt & pepper
green onions, chopped
Spicy shrimps:
200gr frozen peeled shrimps
1 tbsp olive oil
1 garlic clove, minced
1 chilli pepper, chopped
salt & pepper
Preparation:
Start by putting the pieces of the cauliflower in a food processor and mix until you get a rice like consistency.
On a frying pan, add the olive oil and the onions. Let it cook for about 2 minutes.
Then, add the carrots and the peas and mix for another 5 minutes.
You can now add the cauliflower rice and keep cooking until you get a soft texture. (About 10-15 minutes)
Add the seasonings, the soy sauce, salt, pepper and the green onions.
Make a whole on the cauliflower rice, and pour the 2 beaten eggs into it. Then, slowly incorporate it into the rice.
On the side prepare the shrimps, by adding some olive oil on a frying pan and adding the garlic and the chili pepper. Let it cook for about 2 minutes and add then the shrimps. Add some salt and cook for another 5 minutes.
Add the shrimps to the rice, and there you go.
Sprinkle with some green onions on top and serve.
