Crispy Fillet on a Vegetable Bed

Crispy hake fillet on a bed of sautéed vegetables. Simple and easy dish, with plenty of vitamins, fiber and protein.

Taste of spring and natural ingredients.

A good way to add extra greens to your meals. If you are not a fan of raw vegetables or salads, try to sauté them for a couple of minutes, with some olive oil, onion and garlic. You will give them a softer texture, some extra taste and keep all of the nutrients. Serve it with a fillet of fish, to create a complete and healthy meal.

  • Servings: 2 servings


Ingredients

  1. Fillets:

    2 medium fillets of hake

    1 egg

    200ml milk (oat milk or any other of your preference)

    1 cup oat flour

    1/2 cup bread crumbs, with garlic and herbs

    salt & pepper

    olive oil


  2. Vegetables Bed:

    1 onion, chopped

    2 garlic cloves, minced

    1 red pepper, chopped

    1 yellow pepper, chopped

    100gr baby spinach

    10 cherry tomatoes, sliced in half

    salt & pepper

    oregano

    parsley

    olive oil


Preparation:

  1. In a wok, over medium heat, add a little bit of olive oil, then the onion and the garlic, and sauté it for 1-2 minutes. Then add the chopped vegetables and let it cook for about 5 minutes. Add the salt, pepper and the oregano and sauté for another 1-2 minutes. Remove from heat and pour it into the plates.

  2. In a bowl, mix the oat flour, bread crumbs, salt and pepper. In another bowl mix the egg, milk, salt and pepper. First, dip the fish fillet into the egg mixture and then the flour mixture.

  3. Over a medium heat skillet, with a little bit of olive oil, fry the fillet fish, for about 5 minutes on each side. Remove, drain soak it with a kitchen pepper to remove the grease, and then place it on top of the vegetables.

  4. You can add some parsley on top or serve it with tomato sauce.
