Red Velvet Cupcakes
Gorgeous red velvet cupcakes, a dessert for any occasion.
Can’t decide making a red velvet cake or cupcakes for the weekend? With this recipe you won’t need to make that decision. Fluffy and soft red velvet cupcakes, with delicate cream cheese on top. Perfect for your kids party, a dinner with friends or family, a treat for your colleagues at work, or even a special dessert for Valentine’s Day or Christmas. It will conquer any of your guests.

Ingredients
Cupcakes:
1 cup butter, melted
1/2 cup sugar
1 tsp vanilla
1 egg
1 tbsp cocoa powder
1 and 1/4 cup of self-raising flour
1 tsp red food coloring, paste
1/2 tsp baking soda
1/2 cup kefir
Cream Cheese:
100gr butter, room temp.
200gr cream cheese, room temp.
1 cup powdered sugar
1 tsp vanilla
Preparation:
Preheat the oven to 180°C.
In a large mixing bowl using a hand mixer, mix the butter and the sugar together until light and fluffy.
Add the egg and mix until fully combined, then add the vanilla, cocoa powder, red food coloring, baking soda and vinegar, and mix gently.
Slowly, mix in the flour and the kefir. Make sure to mix in each ingredient until just combined and be careful not to over mix the batter.
Evenly distribute the batter between the cupcake liners in the prepared muffin pans, filling each one only halfway full.
Bake for about 15 minutes, until you see that the top is slightly darker.
Let it sit in the oven for a few minutes and carefully remove the cupcakes from the pan.
In another bowl, mix the butter, the cream cheese, the sugar and the vanilla, until it’s well combined and smooth.
Once the cupcakes have cooled completely, cover it with the cream cheese and some crumbs from one of the cupcakes.
