Vegetarian Beans & Mushrooms Burger

Grilled vegetarian black beans & mushrooms burger. Packed with protein, fiber and low fat.

A fast-food dish loaded with healthy ingredients.

Craving for a burger? Try this meatless version. Simple, crowd-pleasing and super tasty and very satisfying (believe me, you will be very satisfied after eating one of these). Perfect for a dinner or a BBQ, this burger will please both meat-eaters and vegetarians. You can make a vegan option by replacing the bun and removing the cheese.

Ingredients

  1. Vegetarian burger:

    1 medium can black beans

    1 medium onion, chopped

    2 garlic cloves, minced

    2 tbsp black rice, cooked

    1 tbsp oat flour

    1 tbsp bread crumbs

    200gr all purpose flour

    1 vegetable broth

    1tsp smoked paprika

    1tsp cayenne pepper

    1tsp black pepper

    1tsp cumin

    1tsp oregano

    1tsp BBQ sauce

  2. Toppings:

    4 burger buns

    1 purple onion, round slices

    100gr mushrooms

    50gr baby spinach

    4 tsp ketchup (100%)

    4 slices cheddar cheese


Preparation:

  1. First, cook the brown rice.

  2. Heat a skillet, and sauté the onions, the garlic and the mushrooms for about 10 minutes, until it gets a nice golden colour. Add the vegetable broth and mix well until it is dissolved.

  3. On a food processor/blender blend the beans, the sautéed mushrooms, and add the spices (cumin, paprika, cayenne pepper, black pepper, BBQ sauce and oregano). Once it’s nicely mixed, pour it into a bowl and add the brown rice and the oat flour. Mix it well.

  4. Divide into 4 patties, and then wrap it with the bread crumbs.

  5. Grill it with a little bit of olive oil or bake it in the oven for about 4-5 minutes on each side.

  6. On the side, prepare the caramelised purple onion and the golden mushrooms. On a skillet, with a little bit of olive oil sauté them (separately) for about 7-10 minutes. Add a little bit of salt.

  7. Now is time to make your burger. On one of the half of the bun put the spinach leafs, then the burger, the cheddar cheese, the caramelised onions, the mushrooms, the ketchup and put the other half on top. You can add some sweet potatoes fries as well.
