What can be better than a warm bowl of oatmeal - a carrot cake oatmeal! A healthy and easy recipe that takes the delicious flavors of a carrot cake and creates this breakfast full of fiber and nutrients. Carrots are a good source of beta carotene, vitamin K, potassium and fiber. Just 10 minutes and you can enjoy this nutritious bowl.

  • Cooking time: 10 min

  • Servings: 1-2 servings


Ingredients

  1. Ingredients:

    1 cup oats

    2 cups almond milk (you can use any other milk or water)

    1/2 carrot, shredded

    1 tbsp walnuts

    1/2 tsp cinnamon

    1/2 tsp nutmeg

    1/2 tsp vanilla

    1 tbsp honey

  2. Toppings:

    Raisins

    Walnuts


Preparation:

  1. In a small pan over low heat, add in the almond milk, the shredded carrots and bring to a simmer.

  2. Once the milk comes to a simmer, add the oats, cinnamon, nutmeg, vanilla and let it cook for about 3 minutes.

  3. Add then the honey and the walnuts and simmer for another 2 minutes.

  4. Serve it warm and top with some walnuts, raisins and cinnamon.
