Matcha Mousse Mini Cake
Matcha mousse mini cake inspired in Asian flavors

Matcha is a powder made from green tea leaves and it is a very popular ingredient in Asian desserts. It not only gives an amazing color to the desserts, but it is also very nutritious and has a very delicate taste. With a white chocolate glaze on top and a raspberry jam on the inside, it will give you an explosion of different flavors that combines perfectly together.

Ingredients
Base:
100gr oat cookies
1/2 cup melter butter
Matcha Mousse:
1 egg yolk
2 tbsp sugar
1 tsp corn starch
1 tsp vanilla
100ml milk
5gr noun-flavored jelly
1 tsp matcha powder
200ml cream
1 tbsp raspberry jam
White Chocolate Glaze:
1 cup white chocolate
1 tsp matcha powder
1 tbsp whipped cream
Decoration:
fresh raspberries
white chocolate
Preparation:
Pour the oat cookies and the butter into a food processor and mix until you get nice crumbs.
Grab a mini mold for cheesecake and pour the crumbs and press it. Then let it cool in the fridge for about 10 minutes.
Mix the egg yolk, sugar, cornstarch, and vanilla extract in a pot, add warm milk, mix, and heat over low heat until thickened.
Add the soaked gelatin and mix, then add the green tea powder dissolved in water. Mix it well and then let it cool.
In a bowl whip the cream and then, slowly, add the green tea mixture and mix.
Pour the mousse mixture into the mold, over the base, and put it in the refrigerator for about 2 hours.
Mix the white chocolate and whipped cream and put it in the microwave for about 30 seconds. Then add the green tea powder and mix and then add the melted gelatin.
Pour the green tea over the mousse and put in in the refrigerator for another 2 hours, or ideally overnight.
Serve it with some fresh raspberries and white chocolate on top.
