Cherry Overnight Oatmeal
Overnight oatmeal with sugar-free homemade cherry jam.
Time for a sweet!
Summer is coming up, which means is cherry season! Why not start the season with this creamy cherry overnight oatmeal with a cherry chia jam. Sweetened only with the fruit, rich in fiber and healthy fats. You wake up, and have already an amazing breakfast waiting for you. Nutritious, very satiating and delicious!

Ingredients

1 cup oats
200ml almond milk
1 small banana, mashed
3 tbsp chia seeds
1/2 tsp vanilla extract
Cherry jam:
2 cups cherries
1/4 cup water
1/4 cup chia seeds
Toppings:
Fresh cherries
Coconut flakes
Preparation:
For the cherry jam, in a small pot, bring the water and the cherries to a boil. Then mash the cherries (I used a blender for this) and let it cook for another 10 minutes. Turn off the heat and add the chia seeds. Once it has cooled down, store it in the fridge.
In a bowl, mash the banana, then add the oats, almond milk, chia seeds and vanilla, and mix gently. Let the mixture thicken a little bit in the fridge.
In a jar, for the first layer put 1-2 tbsp of the cherry jam, then add the oats, and let it overnight in the fridge.
In the morning add the toppings and it’s ready to eat.
