  • Preparation Time: 15 min

  • Cooking Time: 30 min

  • Servings: 9 scones

Ingredients

  1. Scones:

    500gr all purpose flour

    2 tsp baking powder

    100gr butter

    300ml milk

    2 tbsp white sugar

    1 tsp salt

    1 tsp vanilla

    1 egg yolk

  2. Blueberry jam:

    200gr blueberries

    2 tbsp brown sugar

Preparation:

  1. Pour the flour into a large bowl. Add the baking powder, salt, sugar, and then mix.

  2. Add the butter and rub in with the fingers until the mix looks like fine crumbs.

  3. Once it’s well mixed, make a whole in the middle and pour the milk and the vanilla. Mix it quickly with a fork until you get a more or less even dough (it should have some crumbs).

  4. Scrape the dough onto a floured surface and lightly roll it out into a circle, about 3cm thick. With the help of a small glass cup, cut small circles.

  5. Brush the top of the scones with a bit of egg yolk and put them on a baking pan.

  6. Bake it for 30 min. at 180 C.

  7. While the scones are baking, pour the blueberries into a small pan and let it boil, then add the sugar and keep mixing until you get a thicker consistency. Then blend it on a food processor to get the jam consistency.

  8. Once the scones are ready, let them rest for a few minutes and them serve it with some butter and jam.
