Healthy Chicken Chilli
Chicken chilli made of lean ground chicken, red beans and corn. Slightly spiced, full of protein and fiber.
A healthier version for one of the best comfort foods.
A perfect option to warm you up during winter days. Just imagine, one of those cold days, it’s raining outside, and you are at your home sharing a bowl of chilli with your family or even eating it by yourself. Doesn’t it give you an especially cozy feeling? And the best part, it is HEALTHY and full of nutrients. For a slightly fresh taste, serve it with some guacamole. If you are Mexican food lover (as I am), add some nachos on the side.

Servings: 3-4 servings
Ingredients
Chilli:
250gr lean ground chicken
1 medium onion, chopped
2 garlic cloves, minced
2 small red peppers, chopped
1 medium can red beans
1 small can sweet corn
1 cup chicken broth
1 cup tomato paste (100%)
1tsp paprika
1tsp cayenne pepper
1tsp cumin
1tsp oregano
1/2 fresh chilli pepper, chopped
salt & pepper
fresh parsley
Guacamole:
1/2 small onion, onion
1 tbsp of lemon juice
2 avocados
5 cherry tomatoes, chopped
salt & pepper
Preparation:
In a large pot at medium heat, sauté for about 5 minutes the onion and garlic, with a little bit of olive oil.
Then add the red pepper stir for another 3-5 minutes and add the ground chicken. Break up the meat and let it cook until no longer pink.
Add the spices then, cumin, cayenne pepper, paprika, salt, pepper, oregano and stir for about 1 minute.
Next, add the tomato paste and the chicken broth, and let it boil. Add then the red beans and the corn. Add the chilli pepper and let it cook at low heat for about 25-30 minutes, until all the flavours come together.
On the side prepare the guacamole. In a small bowl, mash together the avocados with the lemon juice, salt and pepper. Then add the onion and tomatoes and mix. Put it on the fridge while the chilli is cooking.
Once the chilli is cooked, serve it in a bowl with a spoon of guacamole on top, some chilli pepper slices, fresh parsley and nachos.
