Homemade Nut Caramel Bars
Healthy homemade energetic bars with nuts, chocolate and dates.

Looking for a healthy snack? Try this 100% whole food bars, made with only natural ingredients (vegan friendly, paleo friendly). I decided to create two versions, one for the lovers of milk chocolate and the other one for those who prefer dark chocolate (with a pinch of salt).

Ingredients
Base:
1 cup fresh dates
30gr chopped almonds
30gr chopped caju
1 tsp almond butter
1 tsp vanilla extract
Caramel:
2 tbsp almond butter
1 tbsp tahini
1 tbsp coconut oil, melted
1 tbsp honey
Topping:
dark & milk chocolate (vegan version)
1 tbsp coconut oil
Preparation:
Place all the ingredients of the base into a food processor and blend it until you get nice bread crumbs.
In a baking pan put some parchment paper and firmly press he mixture into the pan, levelling it with a spoon. Try to create an even square, so you can can it later in bars. Put it in the fridge.
For the caramel, combine all the ingredients in a food processor and pour the caramel over the base and freeze for about 30 minutes.
To make the glaze, put a pan over a very low heat and melt the chocolate and the coconut oil.
Remove the base and the caramel from the freezer and pour the chocolate over the caramel.
Freeze for another hour and then cut into bars.
You can store it in the refrigerator for about 2 weeks.
