Three Way Dumplings
Chinese style dumplings with three different fillings.

Dumplings are a must when you order Chinese food. Since I went back from China (where I stayed for one year), dumplings became my new comfort food. With so many different fillings, meat, shrimp, vegetables, this is a perfect option for any meal of the day. Juicy in the inside, crispy on the outside and absolutely delicious.

Ingredients
Dough:
500gr all-purpose flour
1 tsp salt
1 1/2 cups warm water
Fillings:
150gr ground pork
150gr ground veal
150gr mushrooms, diced
2 cups purple cabbage, sliced
2 cups green onion, sliced
3 cloves garlic, minced
1 cup carrots, shredded
2 tbsp soy sauce
1 tbsp sesame oil
1 tsp pepper
1 tsp curry powder
1 tsp ginger, powder
Preparation:
In a bowl, combine all the ingredients of the dough and mix until well-combined.
On a floured surface, roll out the dough and knead until smooth.
Divide the dough into 2 parts. Then roll out 1 piece into a thin circle layer. With the help of a big glass cup make the circles for the dumplings. Do these until you have more or less 25 thin circles.
In another bowl, mix the cabbage, green onion, garlic, soy sauce, ginger and sesame oil.
For the pork filling, combine one cup of the cabbage mixture and the ground pork. Add the pepper.
For the veal mixture, combine the ground veal, one cup of the cabbage mixture, the carrot, the curry powder and the pepper.
For the mushroom filling, combine the mushrooms and one cup of the mixture.
To make the dumplings, grab one circle and in the center pour 1 tsp of the filling. Fold one of the side and wrap over the filling to the other side, using your fingers pleat the edges to seal. Repeat for the rest of the fillings.
Heat a skillet with some oil and add the dumplings. Once the bottoms are nicely brown, add some water and cover with a lid. Let it steam for about 5 minutes.
Serve with some soy sauce and red pepper flakes.
