Kimchi Pancakes (Kimchijeon 김치전)

Korean style kimchi pancakes

A delicious savory Korean pancake made with kimchi. A very versatile recipe, where aside from the basic flour batter and kimchi you can add all types of ingredients, onions, vegetables, some type of protein, etc. For some extra protein and to make the pancakes fluffier, I added eggs to the recipe, but you can make it without it and they will still be delicious.

  • Preparation Time: 15 minutes

  • Cooking Time: 5 minutes

  • Servings: 2 persons


Ingredients

  1. Butter:

    1 egg

    1/4 cup of water

    1/4 cup of kimchi juice

    2 tbsp kimchi

    1/2 cup of flour

    2 tbsp scallions, chopped

    salt

    pepper

  2. Sauce:

    1 tbsp soy sauce

    1 tbsp water

    1 tsp vinegar

    1 tsp sugar

    1 tsp minced garlic

    scallions


Preparation:

  1. Start by mixing all the ingredients of the butter in a bowl, until well combined.

  2. In a frying pan, add a little bit of olive oil and once it is heated, pour some butter and let it fry for around 1 minute on each side, or until nice and golden.

  3. Repeat with the rest of the butter.

  4. On the side, on a small bowl pour all the sauce ingredients and mix.

  5. Serve the pancakes with the sauce and some fresh scallions on top.
