Korean Japchae 잡채 (with black noodles)
Korean inspired Japchae made with black noodles, marinated veggies and sirloin beef.
A perfect combination of flavours and textures.
A dish full of color, different flavours and textures. This noodles may take a little bit of time to prepare all the ingredients separately, but by doing so you enhance the individual flavour of each. You can taste a nice sweet and savoury dish, with crunchy vegetables and soft and chewy noodle texture.

200gr black noodles
1/2 onion, sliced
150gr sirloin beef, cut into strips
1 carrot, cut into strips
1 cup mixed peppers, sliced
1 cup brown mushrooms, sliced
100gr baby spinach
1 garlic, minced
2 tbsp sesame oil
1 tsp rice wine
1 tbsp honey
brown sugar
soy sauce
salt & pepper

Preparation:
Prepare the meat marinade on the night before or 4 hours before.
First, cut all the veggies in slices.
Cook the noodles.
On a pan, with a little bit of oil, sauté the mixed peppers. Pour them in a bowl, then sauté the carrots. Then caramelise the onions.
On the side add the marinade to the mushrooms (soy sauce, honey, brown sugar, sesame oil and black pepper) and prepare add the seasoning to the spinach (salt, sesame oil, garlic). Then sauté them, separately.
Now, fry the meat strips for about 5 minutes.
In a big bowl, add the noodles, the meat and all the veggies. If necessary add more seasoning.
