Onigirazu Sushi Sandwich with Sirloin Steak
Sushi sandwich with sirloin steak, veggies and avocado.
Try this Japanese rice sandwich wrapped in seaweed.
Filled with marinated grilled meat, sautéed veggies, and avocado, this Onigirazu makes a perfect and healthy lunch for school, work, or a picnic. It is very versatile, and you can try different combinations for the filling. You can use chicken, tofu, salmon, eggs, or just veggies. By replacing the bread in a sandwich, this recipe is suitable for celiacs.

Ingredients
Rice:
1 cup sushi rice
2 cups water
2 tbsp rice vinegar
2 tbsp sugar
1tsp salt
Filling:
300gr sirloin beef, sliced
1/2 onion, sliced in half moon
1 cup red pepper, sliced
1 cucumber, sliced
1 cup carrots, shredded
1/2 avocado
salt & pepper
olive oil

Sweet and sour sauce
Nori seaweed (x3)
Preparation:
Cook the rice until is well sticky, then add the seasonings.
On the side sauté with a little bit of olive oil the shredded carrots, then separately the red pepper.
On another pan, prepare the caramelised onion.
Cut in thin slices the cucumber and the avocado.
Take the meat out from the marinade, and fry it for 2-3 minutes on the pan.
Now is time to shape the onigirazu. Place a sheet of film paper, on top put a nori seaweed.
Put a square of rice in the center of the seaweed, then put on layers he carrots, the red peppers, the cucumber, the meat, the caramelised onions and the avocado slices.
Place another square of rice and press gently.
Fold the corners of the seaweed towards the center and over the filling.
Wrap the film paper so that is tightly wrapped.
Let it rest for about 10 minutes and then cut in half.
Serve it with a little bit of sweet and sour sauce.
