Rainbow in the sky is beautiful, but have it in your plate is delicious.

Super nutritious salad, make in under 20 minutes. As the sunny days are coming back, your meals are asking for some extra colour. What is better than a salad? Versatile, easy to go, light and tasty. Try this colourful and nutrition rich salad with salmon, baby spinach and avocado.

  • Preparation Time: 15 min

  • Servings: 1 bowl


Ingredients

  1. Salad:

    1 cup baby spinach

    1 cup arugula

    1 cup red&orange peppers, chopped

    1 cup shredded carrot

    1 boiled egg

    5 cherry tomatoes

    50gr smoked salmon

    1/2 avocado

    olive oil and vinegar

    salt


Preparation:

  1. Cut all the ingredients and in a large bowl combine all the ingredients.

  2. On the side, boil the egg, cut it in half and add o the salad.

  3. Season the salad with some olive oil, vinegar, salt and fresh herbs.
